Brewed to order, specs given were: golden, no hop bitterness, less than 5 per cent abv, fruity and tropical. I left the hops stand for 30 minutes after the boil-off, obviously in real life this will increase the IBU’s but I keep assuming zero impact on paper.

Mash efficiency is getting ridiculously high, 32 litres at OG 1042 after rinsing, 4.665kg at 304.5 degrees litre makes 95 per cent. Could this be due to acidulated malt? A few extra litres at intended gravity won’t hurt…

Kohatu had no aroma at all when taken out from the vacuum foil packet – we’ll see.
