Tasting impressions #57: Stout Porter

A test bottle really as this beer will hopefully mature a couple of years to come. Bottled 28/11/13 at 1017 FG ie 7.7 per cent abv. Aroma is roast dark malts and coffee. Carbonation is quite subdued, bubbles only evident in the bottom of the glass. Taste is a slight hit of warming alcohol, syrupy treacly bitter hops upfront on the roof of the mouth, then roast malty coffee. Bitterness is clearly unrefined still, no usual smoothness as of yet. The amount of sugar used has smoothed out nicely though. Mouthfeel is medium. Some sourness but not much. What seems clear is that the bitterness addition of hops is sufficient – no aroma hops are needed.

I have reserved a few 0.75L bottles for this Christmas but most of the bottles are 0.33L small Belgian ones, stashed away in safe-keeping and to be matured as long as possible. I also hope to gift a few to a couple of beer bloggers/reviewers/nerds etc – but not quite yet, I’ll give this beer some time first.

To recap, this brew might have potential but it’s too early to tell. As is, very drinkable and passable, not earth-shattering. Next update in a year’s time.

Tasting impressions #58: Rambler’s Delight Bitter

December 10, 2013 Comments off

Only five days from bottling but this beer is conditioning at full speed. Hochkurz mash schedule had no ill effects. Slight amount more crystal malt than usual adds some toffee. Colour I nailed. Fuggle hops bring that boring brown beer feel. Balance is there and it works. One thing I would change, add some more German Magnum bittering hops, 5 IBU’s worth or so, just to give it that little bit more of upfront bitterness – perhaps I just won’t learn how to account and adjust for my super soft water. But I am nit-picking here. I could brew this beer all over again and again, a slightly different version of it – pale ale, crystal, munich, wheat, black/chocolate (for colour), magnum/target, challenger, northdown, ekg, fuggle, bramx, styrian goldings, endless amount of permutations. I’ll get back to this beer when I sample the mini-cask version.

Tasting impressions #54: Smoked Porter Revisited from Cask

Mini-cask version slightly after a month’s conditioning at cellar temperature. The smokiness has turned into ashy character and there is little lactid acid too. Light, roasty, chocolatey, fruity. It is very hard to make Weyermann Rauch-malt to stick around and linger – instead of giving one a slap around the face it will mellow and pinch the cheek.
