This is an odd one. The hops are an unknown country variety growing near a spring and could originate from the 1920’s or even the 1800’s so the IBU% is a total guesstimate based on a conservative AA% of 3. Loads of yellow Lupulin specks in the boiling wort though and the aroma reminded me of Fuggles.

The yeast is WLP-566 washed from brew #21. There’s some Rauchmalz and a fair amount of a type of Finnish rye malt used for low-alcohol table-beer (Tuoppi Kotikalja, with very little fermentable sugars, “a crystal rye malt”).

Mash efficiency was ~85%.
